Taleggio Dop
It's a soft-paste cheese
produced exclusively with cow's milk, the washed rind is
pink/orange, soft and thin, the paste is soft and melting to the
palate, the taste is sweet and delicate with aromatic shadings.
Once maturation is reached the taste gets decidedly spicier. The
origin of the Taleggio is ancient, probably around the X or XI
century, even if the first sure news date to the year 1200. Since
1988 the Taleggio has been a Denomination of Origin cheese, while
it has obtained the European acknowledgment of Denomination of
Protected Origin in 1996. The production and the commercialization
are controlled and guaranteed by the Association for the protection
of the Taleggio cheese.
