BROWN COWS
Di Sola Bruna - aka Brown Cow-Parmigiano Reggiano DOP is known
for its rich but delicate taste. The cheese is a straw color,
indicative of a traditional diet of different hay varieties and
feed. The milk from the Brown Swiss cows has higher protein and
casein contents than most other cow's milk. After aging for 24
months, it melts in your mouth and offers a sweeter, nuttier and
almost toffee like taste because of the milk from this special
breed of cow.
There are only a few producers of this truly exceptional cheese.
Ours comes from the only Azienda Agricola that produces 100% milk
from Bruna Alpina and transforms it all into Solo di Bruna
Parmigiano Reggiano. Our farm does not produce any other variety of
Parmigiano.

According to its age you can pair the cheese with dry fresh whites or spumante (Friulano, Pinot Grigio, Kerner, Trebbiano d’Abruzzo, Prosecco), with medium body reds (Sangiovese, Barbera d’Alba, Morellino di Scansano, Falerno), up to structured reds or important Spumante (Nobile di Montepulciano, Amarone, Bolgheri, Aglianico, Etna, Cannonau, Franciacorta, Champagne). If very aged, you can pair it even with late harvest wines like Vini Passiti or Marsala.
