Ricotta Salata
Delitia Ricotta Salata, dried and
salted is a sheep's milk cheese from Sardinia. The meaning of the
name is "re-cooked" and "salted". The cheese is made from the whey
of the sheep milk used in the production of Pecorino Romano. Firm,
yet tender, it is very white in color and has a mild and sweet
taste. It is ideal for grating and has a high nutritive value and
high gastronomical level.
